Ingredients

  • 4 large potatoes, thinly sliced
  • 1/2 cup chopped onions
  • 4 large eggs
  • Salt, to taste
  • Cooking oil for frying

Directions

  1. Heat enough cooking oil in a deep frying pan to submerge the sliced potatoes. Make sure the oil is hot but not smoking.
  2. Carefully add the thinly sliced potatoes to the hot oil. Fry them until they turn golden brown and crispy. This may take about 5-7 minutes.
  3. Once the potatoes are browned, add the chopped onions to the frying pan and cook for a few minutes until they become translucent and slightly caramelized.
  4. Remove the fried potatoes and onions from the oil and drain them on paper towels to remove excess oil.
  5. In a bowl, crack the eggs and beat them until well-whisked. Add salt to taste and mix thoroughly.
  6. Add the deep-fried potatoes and onions into the whisked eggs. Gently fold them into the egg mixture until they are well coated.
  7. In a separate pan, preferably non-stick, heat a little cooking oil to grease the surface. Make sure it’s hot but not smoking.
  8. Pour the potato and egg mixture into the hot, greased pan, spreading it out evenly to form a round shape like a pancake.
  9. Cover the pan and let the mixture cook on low to medium heat for about 10 minutes or until the bottom is golden and set.
  10. Carefully flip the pancake using a spatula and cook the other side for another 5 minutes or until it’s cooked through and golden brown.
  11. Once both sides are cooked to your liking and the pancake is firm, transfer it to a serving plate.
  12. Slice the potato and egg pancake into wedges or squares, and serve hot. You can enjoy it as is or with your favorite sauce.
