Add a vibrant twist to your traditional meal with this Layered Carrot Chapati recipe, where the goodness of grated carrots brings out a delightful, multi-layered chapati.

Ingredients
- 1kg whole wheat flour
- 1 cup grated carrots
- 1 teaspoon salt (adjust to taste)
- Hot water, as needed
- Ghee or oil for cooking
- Extra flour for dusting
Directions
Step 1: Prepare the dough
- In a clean bowl add 1kg of whole wheat flour, 1 teaspoon salt, grated carrots and 2 tablespoons of oil and mix till well incorporated in the flour.
- Add hot water bit by bit as you knead it into a soft and smooth dough.
- Cover the dough with a damp kitchen towel or clean polythene bag for about 10 minutes.
Step 2: Create the Layers
- After the time has elapsed, knead the dough once again.
- Divide it into nine small lemon-sized balls and roll each ball into a circle using a rolling pin and some dry flour for dusting.
- Apply oil and fold the rolled circle into pleats like a fan, creating a long strip. Roll this strip from one end to form a spiral-shaped dough bundle. Repeat the procedure until you are done with all the other divided doughs.
Step 3: Cook the chapati
- Heat your pan over medium heat for 5-6 mins as you roll the spiral-shaped dough bundle back into a flat round circle.
- When the pan is ready, place the rolled chapati on the hot pan and cook for about 1-2 minutes on each side or until small golden spots appear.
- Brush with oil or ghee while cooking for a nice, crisp texture.
Repeat for the remaining rolled chapatis.
Serving
Once cooked, remove the layered carrot chapati from the pan and place each on a plate.
Serve the delicious and colourful chapati hot with your favourite side dish, such as yoghurt, or a vegetable curry.
